  • 2 cups shredded cooked chicken
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup barbecue sauce
  • 1 cup diced tomatoes
  • 1 cup chopped bell peppers
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Cook the spaghetti in salted boiling water until al dente, then drain and set aside.
  2. Heat olive oil in a skillet and sauté onions and bell peppers until tender.
  3. Add garlic powder, salt, and pepper, stirring to combine.
  4. Add shredded chicken, diced tomatoes, and barbecue sauce; simmer for 5 minutes.
  5. Add the cooked spaghetti and toss until evenly coated.
  6. Sprinkle Monterey Jack cheese on top, cover, and cook until melted.
  7. Garnish with cilantro if desired and serve hot.

Notes

Use rotisserie chicken for convenience and added flavor. Adjust the spice level with jalapeños or red pepper flakes if desired.
