A punchy, savory, all-purpose sauce that’s fragrant, spicy, and deeply rooted in Asian kitchens. Perfect with noodles, rice, dumplings, or roasted meats.

Ingredients

  • 2 tablespoons fresh ginger, finely minced
  • 1/2 cup neutral oil (like canola or grapeseed)
  • 1 teaspoon salt
  • Optional: splash of soy sauce or rice vinegar for added depth

Instructions

  1. Place the minced scallions and ginger in a heatproof bowl.
  2. Heat the oil in a saucepan over medium heat until shimmering and just about to smoke.
  3. Carefully pour the hot oil over the scallions and ginger mixture.
  4. Stir in the salt (and optional soy sauce or vinegar if using).
