Ingredients

Scale
  • 2 ripe pears, cored and chopped
  • 1/2 cup fresh ginger, sliced thin
  • 1 cup apple cider vinegar
  • 1/2 cup honey or maple syrup
  • 1/4 teaspoon salt
  • Sparkling water, to serve
  • Ice cubes
  • Fresh pear or ginger slices, for garnish (optional)

Instructions

  1. In a medium saucepan, combine chopped pears, sliced ginger, and salt.
  2. Add apple cider vinegar and bring to a simmer over medium heat.
  3. Simmer for 10-12 minutes until pears are soft and fragrant.
  4. Remove from heat and let cool slightly.
  5. Strain the mixture through a fine mesh sieve or cheesecloth into a bowl, pressing to extract all the liquid.
  6. Stir in honey or maple syrup until fully dissolved.
  7. Transfer to a clean bottle or jar and refrigerate for at least 4 hours (preferably overnight) to chill and infuse flavors.
  8. To serve, pour 2-3 tablespoons of the shrub syrup into a glass with ice, top with sparkling water, and garnish if desired.

Notes

For extra kick, muddle some fresh ginger in the glass before adding syrup and sparkling water.
