  • 2 chicken breasts, thinly sliced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp fresh ginger, julienned
  • 3 garlic cloves, minced
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 2 tbsp vegetable oil
  • 1 tsp sugar
  • 1 tbsp fish sauce (for Cambodian version)
  • 2 scallions, chopped
  • 1 red chili, sliced (optional)
  • Cooked rice, to serve

Instructions

  1. Marinate chicken with soy sauce, oyster sauce, and a pinch of sugar for 10 minutes.
  2. Heat oil in a wok over high heat.
  3. Add ginger and garlic, stir-fry until fragrant.
  4. Add chicken and stir-fry until no longer pink.
  5. Add onion and bell pepper; cook 2-3 minutes.
  6. For Cambodian flavor, add fish sauce and chili at this stage.
  7. Stir in scallions and cook another minute.
  8. Serve hot over rice.

Notes

Customize your stir-fry with vegetables or protein of choice. Use lots of fresh ginger for bold, authentic flavor.
