Old-Fashioned Candied Ginger Recipe – Easy, Classic, and Homemade

Sweet, spicy, and steeped in nostalgia, this old-fashioned candied ginger is a chewy homemade treat perfect for gifting, snacking, or soothing digestion.

  • 1 lb fresh ginger root (peeled and thinly sliced)
  • 5 cups water
  • 3 cups granulated sugar (plus extra for coating)
  • Optional: pinch of salt or lemon zest

Instructions

  1. Peel the ginger root using a spoon or vegetable peeler.
  2. Slice into thin, even rounds or matchsticks (about 1/8 inch thick).
  3. Add sliced ginger to a saucepan with water.
  4. Bring to a boil, then reduce heat and simmer for 35 to 45 minutes until tender.
  5. Drain, reserving 1/4 cup of the ginger-infused water.
  6. Return ginger and reserved water to the saucepan.
  7. Add 3 cups of sugar and stir over medium heat.
  8. Simmer until mixture thickens and reaches 225°F (use a candy thermometer), stirring occasionally.
  9. Remove ginger pieces with a slotted spoon and spread on a wire rack.
  10. Let cool for 1 to 2 hours.
  11. Toss in granulated sugar to coat once dry but still slightly tacky.
  12. Store in an airtight container at room temperature for up to 3 months.

Notes

Add lemon zest or a cinnamon stick for variation. Be sure to store in a cool, dry place to prevent stickiness from moisture.
