  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press firmly into a greased 9×13-inch pan. Bake 10 minutes, then cool slightly.
  2. Beat softened cream cheese and sugar until smooth. Add pumpkin puree, eggs, vanilla, and spices. Mix until fully combined without overmixing.
  3. Pour filling over crust and spread evenly. Bake 40–45 minutes until the center is set and slightly jiggly. Cool completely.
  4. Refrigerate at least 4 hours or overnight. Slice into bars and serve with whipped cream, caramel, or cinnamon.

Notes

For best texture, use room-temperature cream cheese and eggs. Avoid overbaking to keep the filling creamy and smooth.
