  • ½ cup grated Parmesan cheese
  • 1 tsp lemon juice
  • Freshly ground black pepper, to taste
  • Optional: cherry tomatoes, fresh basil, crushed red pepper flakes

Instructions

  1. Wash zucchini thoroughly.
  2. Use a spiralizer or julienne peeler to create noodle-like strands.
  3. Sprinkle with salt and let sit for 10 minutes to release excess moisture.
  4. Pat dry with a paper towel.
  5. Heat butter and olive oil in a large skillet over medium heat.
  6. Add minced garlic and sauté for 1 minute, until fragrant.
  7. Toss in zucchini noodles and cook for 2–3 minutes. Avoid overcooking.
  8. Remove from heat, stir in Parmesan, lemon juice, and black pepper.
  9. Plate immediately and garnish with fresh basil or extra cheese.

Notes

For best texture, use medium zucchini that spiralize easily and hold shape during cooking. Avoid overcooking to keep them firm.
