  • 1 1/2 cups unsweetened vanilla almond milk Feel free to use any milk you prefer, such as dairy milk or other plant-based options.
  • 1 cup mashed ripe bananas Use very ripe bananas with brown spots for natural sweetness and moisture.
  • 1/4 cup pure maple syrup Adds natural sweetness; adjust to your preference.
  • 1 tbsp coconut oil Melt and cool slightly before adding to prevent cooking the eggs.
  • 2 large eggs Act as a binder, giving the oatmeal structure and richness.
  • 1 1/2 tsp pure vanilla extract Enhances all the flavors in the oatmeal.
  • 1/3 cup chocolate chips Use your favorite type of chocolate chips, like semi-sweet or dark.

Method
 

  1. Preheat oven to 350 degrees F. Grease an 8×8-inch baking dish with nonstick cooking spray and set aside.
  2. In a large bowl, combine the oats, cocoa, baking powder, and salt. Set aside.
  3. In a medium bowl, combine the milk, mashed bananas, maple syrup, melted coconut oil, eggs, and vanilla extract. Whisk until combined.
  4. Add the milk mixture to oat mixture and stir until combined. Stir in the chocolate chips.
  5. Pour the oatmeal mixture into prepared pan and sprinkle with additional chocolate chips, if desired. Bake for 35 minutes or until oatmeal is set.
  6. Remove from the oven and sprinkle with flaky sea salt, if desired. Cool for 5 minutes before serving. Spoon into a bowl and enjoy!

Notes

This baked oatmeal is perfect for meal prepping; simply reheat individual portions throughout the week. It's also delicious served with a dollop of yogurt or a drizzle of extra maple syrup.
