Ingredients
  

Chicken
  • 6 pieces thin-sliced chicken breasts
Vegetables
  • 1 bag fresh baby spinach
  • 1 package sliced mushrooms
Dairy
  • 1 container green onion cream cheese
  • 8 oz shredded mozzarella cheese
Liquids
  • 120 ml chicken broth
  • 60 ml olive oil plus extra for greasing
Seasoning
  • 1 dash pepper
  • 1 dash herb and garlic seasoning

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease a large baking dish with olive oil.
  2. Arrange the thin-sliced chicken breasts evenly in the baking dish. Season them lightly with pepper and herb and garlic seasoning.
  3. Spread a layer of green onion cream cheese over each piece of chicken, making sure every portion is well covered.
  4. Layer the sliced mushrooms over the cream cheese, followed by the fresh spinach.
  5. Drizzle olive oil evenly over the top, then pour in the chicken broth. Finish by sprinkling shredded mozzarella cheese generously across the entire dish.
  6. Place the dish in the oven and bake for 30–35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Let it sit for about 5 minutes before serving so the sauce can thicken slightly. Serve warm and enjoy the creamy, cheesy layers of chicken and veggies.

Notes

For a more flavorful dish, consider marinating the chicken in a little lemon juice and garlic for 30 minutes prior to cooking.
