Ingredients
  

Peanut Butter Truffles
  • 120 g peanut butter
  • 60 g unsalted butter softened
  • 42 g powdered sugar
  • 0.5 tsp vanilla extract
  • 0.125 tsp flaky salt
  • 113 g dark chocolate chopped
  • 1 tsp coconut oil
  • 30 g chopped peanuts for garnish
  • 0.5 tsp flaky sea salt for garnish

Method
 

  1. In a mixing bowl, add the peanut butter, powdered sugar, butter, vanilla, and salt.
  2. Use an electric mixer to beat the mixture together. If the butter is too soft, freeze it for 20 minutes before proceeding.
  3. Scoop out 10 balls of dough, and place them on a small baking sheet lined with wax paper or a silicone mat.
  4. Place the peanut butter balls in the freezer for 20 minutes.
  5. Melt the chocolate and coconut oil together using a double boiler or microwave.
  6. Remove the balls from the freezer and dunk each into the melted chocolate.
  7. Place the truffles into the fridge to set for at least 5 minutes before serving.

Notes

These truffles can be stored in the fridge in an airtight container for up to a week. They make a delightful gift or a decadent treat for yourself.
