Ingredients
  

Shortbread Cookies
  • 113 g butter, softened
  • 50 g granulated sugar
  • 1 g egg
  • 0.5 tsp vanilla extract
  • 0.25 tsp almond extract
  • 125 g flour
  • 0.25 tsp salt
  • 50 g strawberry jelly

Method
 

  1. Line a large baking sheet with a silicone mat, and make room in your fridge for a cookie sheet.
  2. In a large bowl, add the softened butter and beat with an electric mixer on HIGH until light and fluffy.
  3. Stream in the sugar while beating.
  4. Beat in the egg, vanilla extract and almond extract very well.
  5. Sprinkle the flour and salt on the dough. Mix just until it comes together. It might be crumbly.
  6. Scoop out 2 teaspoons of dough, roll into a ball, and place on the baking sheet.
  7. Dip pinky in flour, lay sideways on each dough ball to make half of a heart. Repeat to complete the heart.
  8. Use a 1/4 teaspoon measure to place jelly on each side of the heart.
  9. Place the cookies in the fridge for one hour. Do not skip this step!
  10. Preheat the oven to 350°F. Bake the cookies for 12 minutes until the edges are just starting to turn golden brown.
  11. Let the cookies cool on the baking pan completely before removing.

Notes

For a twist, try using different flavors of jam or jelly. Cooling on the pan helps the cookies maintain their shape.
